Eggplant Quinoa Tomato Sausage Pasta Sauce
Last week we harvested the last of the produce from our garden before putting it to bed for the winter. This included a couple of eggplants. They were the only ones we harvested from our plant this year.
I had never cooked eggplant before, but I decided to put it in a sauce because Douglas is not a big fan of eggplant. He likes it to be as disguised as possible. First, I peeled and sliced it.
Some friends of ours had given us some homemade quinoa tomato sauce that they made from the tomatoes from their garden. I cooked the eggplant with onions and then added the sauce.
Douglas grilled a bunch of chicken sausages, and I added a couple to the sauce.
It was a delicious meal. In the spirit of the pending holiday this week, thank you Junior and Krystal! I appreciate having good friends like you in our lives.

Eggplant grew on me after eating it several times. Now I love it, and slowly I am converting Douglas as well. You should try growing some next year. Everything tastes better when you grew it yourself!
Yum! I like to roll eggplant in almond flour and garlic and fry it in coconut oil. I wish we could have you guys over for dinner!
